Vegan Mango Ice cream – Refined Sugar free, Quick and Easy.
Vegan mango ice cream is the best ice cream to enjoy in this season of mangoes.
Anyone who loves mango will love this ice cream.
I have been wanting to make this vegan mango ice cream since I made vegan-vanilla-ice-cream . In fact, I attempted at making it once before too but wasn’t successful. This one that I am sharing today came out super good and I loved it.
I love this Vegan Mango Ice cream even more because its so healthy, refined sugar free and still so tasty and creamy.
Lets get into the easiest and quickest recipe for vegan mango ice cream
Makes around 6-7 scoops of ice cream.
Preparation time: 8 Mins.
Rest time: 8-10 hours.
Ingredients required for Vegan Mango Ice cream:
- Half cup of Soaked Cashews (soaked minimum for 3-4 hours)
- 3/4th cup of coconut milk (if needed add later)
- 2 Small sized sweet Mangoes ( I used Alphonso mangoes)
- 10-12 deseeded Dates.
- 1 tsp of coconut butter. (optional)
Method for Vegan Mango Ice cream:
It’s just too simple. Add all of the above ingredients in a blender and blend till smooth. This will be like a creamy paste texture. Now taste for sweetness. Add if required. You can simply enjoy this cream that you made as it is too. It’s too tasty. My Mother in law liked the ice cream at this stage more than the frozen ice-cream. Freeze the ice-cream and before serving defrost for 5 mins. Enjoy!!
While I used Alphonso mangoes here but I would suggest you to use a mango variety that you enjoy.
